Brantley’s Favorite - Chicken Casserole

This recipe is so simple, the video for it is less than two minutes! It’s Brantley’s favorite and he thinks I am a culinary genius every time I make it. There is no way I am going to tell him it’s a one bowl wonder… I enjoy being a casserole goddess. It truly is delicious and homey. I hope that your family enjoys it as much as mine does.

A one bowl wonder!

Brantley’s Chicken Casserole

4-6 servings
1 (10.5 oz) can cream of chicken
1 cup sour cream
1 (8 oz) block cream cheese, room temp.
½ cup milk
1 tsp dried thyme
½ tsp black pepper
1 pkg Ranch dressing
2 cups grated sharp cheddar
3 cups shredded chicken (I use rotisserie)
1 can diced potatoes
1 sleeve butter crackers

Preheat oven to 350 degrees. 
In a large bowl, combine soup, sour cream, milk, cream cheese, thyme, pepper and Ranch packet. 
Stir until smooth.  Mix in one cup of cheese. 
Next add in potatoes and chicken.  Spread mixture into an non greased 9x13 pan.  Sprinkle remaining cheese and crushed crackers on top. 
Bake for 30 minutes, until hot and bubbly.
